snap: Drop git-ubuntu as a stage-package

I'm not sure why this was required in snapcraft.yaml previously, but it
is causing the following build failure currently:

Revert "snap.sh: run snapcraft with sudo"

This is fixed upstream now with snapcraft 7.5.2 so we can remove this
workaround. See: https://github.com/snapcore/snapcraft/issues/4225

snap: refer to the classic flags for installation
